hey coffee lovers ~Freeze coffee as ice cubes and put in almond milk.  
Spicy Chipotle White Bean Hummus
1 (15oz) can cannelli (or navy) beans
1/4 cup tahini
1 tsp garlic powder
1/2 tsp cumin
3 chipotle chilis in adobo sauce (I accidentally dropped in 5)
2 tbs olive oil
1/4 cup lemon juice
Blend everything in a food processor until smooth. Slowly add water until you reach your desired consistency.

Day Sixty-Four.
Well folks I’m headed back to the land of microwave dinners: college.
Things I’m not looking forward to (from a vegan perspective) upon returning to college:
  • not being able to cook
  • thai noodle bowls
  • salads from the cafeteria
  • salads from restaurants
  • salads in general
  • my 1970’s microwave
  • not eating all day until suppertime
  • staring scrambled eggs in the face every morning in the caf
  • not being able to drink frappucinos at The Brew

And, while that^ bullet list DOES seem quite negative, there is one reason I am so glad to be vegan that essentially cancels all the negative stuff out:

  • personally, i feel that veganism is the ethical thing to do.

And, in the end, that’s what matters.

Day Sixty-Three.

Realizations I’ve made over Spring Break:

  • I actually royally suck at preparing tofu of any kind.
  • However, I’m a beast at making delectable burritos.
  • I have yet to find a vegan deodorant that does some deodorizing.
  • Though I’ve been told that Xylitol is a great vegan toothpaste, I can’t find it ANYWHERE.
  • I’m truly turning into a full-bore hippie.
  • I make really really really good vegan chocolate chip cookies.
  • I really miss eggs, but I haven’t given in.
  • I also really want to use argan oil to combat my frizzy hair but it’s also quite difficult to find.
  • I need advice from you guys.
  • I never post anymore and I’m like the worst blog operator ever. 
  • wah I’m sorry don’t hate me ok?

2.5 cups flour
1 cup granulated sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 large dark chocolate candy bar (make sure it’s vegan!) 
2/3 cup vegetable oil
1/4 cup coconut milk 
1 tsp vanilla
1 banana
Preheat oven to 350 degrees.
Mix dry ingredients.
Break candy bar into pieces.
Mix oil, milk, vanilla, banana, and chocolate pieces in a separate bowl.
Mix together the wet and dry mixtures.
Roll dough into balls and put onto cookie sheet. 
Bake for 10-12 minutes.
Recipe yields about 18-22 cookies.
These cookies are delicious. omg.

Day Forty-Six

  • Parents took me to a truck stop diner for supper.
  • Absolutely nothing vegan on the menu.
  • Had salad (minus all the meat, cheese, egg, shit, etc) with no dressing
  • And some plain cooked noodles.
  • yummy
  • I would’ve just liked to stay home and cook
  • but mom and dad had to take me out
  • swell.

Day Forty-Five

  • I go home tomorrow, so you guys should post recipes so I can go grocery shopping :O
  • Can anyone recommend a good vegan shampoo/conditioner? The stuff I have now is shit.
  • What about vegan razors? It didn’t even occur to me that my razor wouldn’t be vegan. Ideas? Gimme a shout.
